Chinese Style Beef in a Rice Cooker

plug itIn this article I shall describe a Chinese beef recipe that I cooked a couple of weeks ago. The seasoned strips of beef provide a tasty source of protein. While the rice and vegetables complete the meal to make it healthy and balanced. It cost under £5 to feed 3 hungry workers. And one of them ate enough for two.
I shall not list quantities in the ingredients list as I just take a guess and chuck things into the pot. Just use a sensible estimate and experiment until you have the balance of flavours that you require.

Ingredients

For beef:

rump steak ginger garlic sesame oil light soya sauce ground black pepper Chinese 5 spice

For the rest:

rice water bean sprouts mushrooms bell pepper Bouillon vegetable stock chopped coriander

Instructions

Beef Marinade

Slice the beef into thin strips about 1 inch with. Chop the ginger and garlic finely, and mix with the garlic, sesame oil, light soya sauce and ground black pepper to form a delicious marinade. Mix the sliced beef with the marinade and set aside in a fridge for a few hours. If I'm planning on serving lunch at 12pm, I'll normally prepare the beef at 9am.

Cooking

Rinse the rice in the rice cooker a few times, and fill with water until there's about a finger nail's breadth of water above the top of the rice. Add about half a teaspoon of vegetable stock to the rice, Chop the mushrooms and bell pepper. I normally chop them into lumps between 0.5cm and 1.0cm in diameter. Add all the chopped mushrooms, bell pepper and unchopped bean sprouts to the rice. Add the marinaded beef to the rice. Mix everything up. Turn on the rice cooker start cooking. When the food is cooked (this normally takes about 30 minutes), turn off the rice cooker, add the chopped coriander, and give it all another good mix. Serve!

Due to health and safety regulations, the only cooking utensils we're permitted are a rice cooker, egg steamer and combination microwave oven (it can do grills and roasts). I try to use these tools to provide our staff with cheap healthy meals. Local dining establishments serve low quality, expensive food, that can have a noticeably negative impact on the afternoon performance of my staff.
This dish involves a delicious combination of chilli prawns and rice. Either raw or pre-cooked prawns can be used. Though raw prawns are better for absorbing flavour from the marinade. The end result is very similar to fried rice, though a wok is not required.

Prawn Marinade: ginger garlic chilli (powder, flakes or fresh) sesame oil light soya sauce

plug itPasta can be one of my favourite foods. However, I only really enjoy it when it's lovingly home cooked, as it enables the food to be served the minute it's ready. And the quality of ingredients is easier to verify. Onions and garlic are essential. And mushrooms and bell peppers are excellent vegetables for balancing the meal, both in terms of flavour and nutrition.
This delicious pasta dish can be cooked using a rice cooker. It is suitable for people who do not have hobs at their disposal. For example, I use it in my office, where we only have a microwave and rice cooker.

The meal contains a lot of vegetables, and can therefore be view as healthy from that point of view. However, I like to add a block of cheese, which you may want to leave out. I also used minced beef to add protein. Though I'm trying to cut down on meat and may leave that out too in the future.

Ingredients

Fusilloni Pasta Garlic Onion Basil Oregano Vegetable Stock Olive Oil Tomato Mushrooms Bell Pepper

Cooking Instructions

Take the minced beef out of the refrigerator about 30 minutes before you start cooking. Cold mince is harder to stir.

Add the pasta to the rice cooker. Some rice cookers come with a rubber pad to stop the pasta sticking to the bottom of the rice cooker. If you have one, use it, otherwise don't worry about it. Cover the pasta with cold water.

Finely chop the onion and garlic. I used 6 cloves of garlic, and 1.5 onions. Add them to the rice cooker. Chop the mushrooms into quarters and the bell pepper into small 1cm squares. If you want a fine sauce, chop the vegetables into even smaller portions. Add these to the rice cooker. Chop up the tomatoes. There is no need to remove the skins as they improve the texture of the final result. A tin of tomatos could be use instead or as well. Season the mixture with salt and pepper. And add the oregano, basil and vegetable stock. If using cheese, chop it unto 1cm cubes and add it to the mix. Finally, add the minced beef. Pour over a healthy amount of olive oil and mix up the food. Turn on the rice cooker and let it all cook.

Potential Issues

There are a lot of ingredients in this recipe, and smaller rice cookers may not cope. If the rice cooker goes to "keep warm" mode too soon, and the food obviously isn't cooked yet, then take out half of the mixture and continue cooking the remaining half. The removed mixture can be cooked afterwards or saved for another day.
